Ingredients

  • 4 squirrels
  • 4 whole cloves
  • 2 cloves garlic
  • 1 can kernel corn
  • 1 can English peas
  • 2 medium potatoes
  • 4 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. Worcestershire sauce
  • 1 1/2 cups broth from squirrel
  • 1 small onion
  • 3 carrots
  • 1 tube biscuits

Instructions

  1. Boil the squirrels in 4 quarts of water with whole cloves and garlic until the meat is falling off the bone.
  2. Remove the squirrels from the liquid and bone them.
  3. Strain the cloves from the broth.
  4. In a large pot, sauté diced onion and sliced carrots until tender.
  5. Add the broth from the squirrel and bring to a simmer.
  6. Stir in flour, salt, and pepper to create a thick gravy.
  7. Add canned kernel corn and English peas to the mixture.
  8. Return the shredded squirrel meat to the pot and combine well.
  9. Pour the mixture into a baking dish.
  10. Top with biscuit dough from the tube.
  11. Bake in a preheated oven at 375°F (190°C) until the biscuits are golden brown, about 20-25 minutes.
