Dad'S Stuffed Peppers
Ingredients
- 8 to 10 green peppers ⓘ
- 1 large onion, diced ⓘ
- several stalks of celery, diced ⓘ
- 2 lb. good ground beef ⓘ
- 1/2 lb. sage sausage ⓘ
- 1/2 tsp. rubbed sage ⓘ
- 1 1/2 to 2 c. crushed saltines ⓘ
- 3 medium eggs ⓘ
- pinch of chili pepper ⓘ
- pinch of black pepper
- heavy pinch of salt ⓘ
- hot pepper and other spices (optional) ⓘ
- canned tomatoes ⓘ
- spaghetti sauce ⓘ
Instructions
- Clean peppers and cut off tops.
- (Save tops, minus stems, for filling.)
- Combine celery, onion, and diced pepper top pieces and saute in a skillet.
