Dad'S Stuffed Peppers

Ingredients

  • 8 to 10 green peppers
  • 1 large onion, diced
  • several stalks of celery, diced
  • 2 lb. good ground beef
  • 1/2 lb. sage sausage
  • 1/2 tsp. rubbed sage
  • 1 1/2 to 2 c. crushed saltines
  • 3 medium eggs
  • pinch of chili pepper
  • pinch of black pepper
  • heavy pinch of salt
  • hot pepper and other spices (optional)
  • canned tomatoes
  • spaghetti sauce

Instructions

  1. Clean peppers and cut off tops.
  2. (Save tops, minus stems, for filling.)
  3. Combine celery, onion, and diced pepper top pieces and saute in a skillet.
