Ingredients

  • 2 c. black walnut kernels
  • 2 c. chopped carrots
  • 1 1/2 c. coconut
  • 3 c. plain flour
  • 2 c. white sugar
  • 3 c. chopped apples
  • 1 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 1/4 c. Wesson oil
  • 2 c. chopped pecans
  • 4 beaten eggs
  • 1 Tbsp. cinnamon
  • 1 Tbsp. nutmeg
  • 1 tsp. vanilla

Instructions

  1. Mix sugar, oil, and beaten eggs; beat well.
  2. Add flour, soda, salt, cinnamon, nutmeg, apples, nuts, coconut, carrots, and vanilla. Beat all together.
  3. Pour the batter into a tube pan and bake for 1 hour at 350°F.
