Ingredients

  • 12 dates, chopped fine
  • 1/2 cup nuts, chopped fine
  • 12 saltines, rolled fine
  • 1 cup white sugar
  • 1/4 teaspoon baking powder
  • 3 egg whites
  • 1 teaspoon almond flavoring
  • whipping cream

Instructions

  1. Mix together the chopped dates, chopped nuts, rolled saltines, and sugar.
  2. Beat the egg whites until stiff peaks form.
  3. Add the almond flavoring to the beaten egg whites and gently fold into the date and nut mixture.
  4. Pour the mixture into a well-buttered pie dish.
  5. Bake at 325°F (163°C) for 25 to 30 minutes.
  6. Allow to cool, then top with whipped cream or Cool Whip.
