Ingredients

  • 1 cup dates, chopped
  • 1 cup hot water
  • 1 teaspoon soda
  • 1 cup sugar
  • 1 egg
  • 1 cup nuts
  • 1 tablespoon butter or oleo
  • 1 1/2 cups flour

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine dates and hot water in a bowl and add soda; let sit until dates are soft.
  3. In a separate bowl, beat sugar and egg until well blended.
  4. Stir in the softened date mixture, nuts, and melted butter.
  5. Gradually fold in flour until just combined.
  6. Pour batter into a greased baking dish.
  7. Bake in the preheated oven for about 35 minutes or until a toothpick inserted into the center comes out clean.
  8. When ready to serve, break the pudding into pieces in a large dish.
  9. Top with whipped cream before serving.
