Date Bran Bread Recipe
Ingredients
- 3/4 pound diced dates
- 1 1/2 c. boiling water
- 4 egg whites ⓘ
- 3/4 c. ripe mashed banana ⓘ
- 1/4 c. white grape juice ⓘ
- 1 1/2 c. whole wheat flour ⓘ
- 2 teaspoon baking pwdr ⓘ
- 1 teaspoon baking soda ⓘ
- 1 c. whole wheat pastry flour ⓘ
- 1/2 c. soy flour ⓘ
- 1 teaspoon vanilla ⓘ
- 2 c. Miller bran ⓘ
- 1 c. minced walnuts ⓘ
Instructions
- Place the dates in a bowl, pour the boiling water over the dates.
- Preheat the oven to 350 degrees.
- Beat the egg whites and combine with banana and grape juice till smooth.
- Sift together whole wheat flour, baking pwdr and baking soda.
- Fold 1 c. of whole wheat mix into the egg mix.
- Mix in 1/2 of the dates, half the soaking water and remaining flours and vanilla.
- Stir in the remaining whole wheat mix, remaining dates and water, bran and walnuts.
- Pour mix into a 10 inch tube or possibly loaf pan sprayed with Pam and floured with whole wheat flour.
- Bake 50 min or possibly till done.
- Cold on pan for 20 min.
