Ingredients

  • 1 cup chopped dates
  • 3/4 cup chopped pitted prunes
  • 1/2 cup dark raisins
  • 1 1/4 cups water
  • 8 tablespoons margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 18 packets Equal
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped nuts

Instructions

  1. Combine chopped dates, prunes, raisins, and water in a saucepan; bring to a boil.
  2. Reduce heat and simmer uncovered until tender and water is absorbed, about 10 minutes.
  3. Remove from heat and stir in margarine; let cool.
  4. In a separate bowl, beat eggs until stiff.
  5. Spread the cooled fruit mixture evenly in a greased 11 x 7 x 2 inch pan.
  6. Pour the beaten eggs over the fruit mixture.
  7. In a bowl, mix flour, Equal packets, baking soda, salt, cinnamon, and nutmeg.
  8. Gradually add the dry ingredients to the egg mixture, mixing well.
  9. Sprinkle chopped nuts on top.
  10. Bake at 350°F until the cake springs back when lightly touched, about 30 to 35 minutes.
