Ingredients

  • 1 cup finely chopped dates
  • 1 1/2 cups water
  • 1 teaspoon soda
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 cup chopped nuts
  • 1/2 cup chocolate chips

Instructions

  1. Combine finely chopped dates, water, and soda in a microwave-safe bowl and microwave for 6 to 8 minutes, turning every 1 1/2 minutes.
  2. Allow the mixture to stand and cool.
  3. In a separate bowl, cream together shortening and sugar.
  4. Add eggs to the creamed mixture and beat well.
  5. Gradually add flour, salt, baking soda, and baking powder, mixing until smooth.
  6. Fold in chopped nuts and chocolate chips.
  7. Pour batter into a microwave-safe dish and microwave on high for 6 to 8 minutes, turning every 1 1/2 minutes.
  8. Let the cake stand to cool before serving.
