Ingredients

  • 1 cup chopped dates
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1 cup oatmeal
  • 1/2 teaspoon baking soda
  • 8 tablespoons butter

Instructions

  1. Combine chopped dates, 1/4 cup brown sugar, and water in a small saucepan. Cook for 5 minutes until mixture boils and thickens.
  2. Remove from heat and add vanilla extract. Allow to cool.
  3. In a separate bowl, combine flour, oatmeal, baking soda, remaining 1/2 cup brown sugar, and butter to make the topping mixture.
  4. Sprinkle half of the oatmeal mixture evenly in the bottom of an 8-inch baking pan.
  5. Spread the cooled date mixture over the first layer.
  6. Top with the remaining oatmeal mixture, pressing down slightly.
  7. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
  8. Cut into bars while still warm and serve.
