Date Filled Bars
Sweet, chewy date-filled bars with a crunchy oatmeal topping, perfect for satisfying cravings and sharing at gatherings or as a comforting snack.

Instructions
- Combine chopped dates, 1/4 cup brown sugar, and water in a small saucepan. Cook for 5 minutes until mixture boils and thickens.
- Remove from heat and add vanilla extract. Allow to cool.
- In a separate bowl, combine flour, oatmeal, baking soda, remaining 1/2 cup brown sugar, and butter to make the topping mixture.
- Sprinkle half of the oatmeal mixture evenly in the bottom of an 8-inch baking pan.
- Spread the cooled date mixture over the first layer.
- Top with the remaining oatmeal mixture, pressing down slightly.
- Bake in a preheated oven at 350°F (175°C) for 30 minutes.
- Cut into bars while still warm and serve.
