Ingredients

  • 3/4 cup chopped pecans or walnuts
  • 1 cup pitted chopped dates
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil
  • 3/4 cup boiling water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1 1/2 cups sifted flour

Instructions

  1. Grease a 9 x 5 x 3-inch loaf pan and preheat the oven to 350°F.
  2. Mix chopped pecans or walnuts, pitted chopped dates, baking soda, and salt in a bowl.
  3. Add boiling water to the mixture, then stir in vegetable oil.
  4. Mix well and let stand for 20 minutes.
  5. In a separate bowl, beat eggs and vanilla extract together, then add to the nut and date mixture; mix thoroughly.
  6. In another bowl, sift flour and sugar together.
  7. Gradually add the flour mixture to the nut and date mixture, mixing thoroughly after each addition.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 1 hour and 5 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 15 minutes.
  11. Remove from the pan and wrap immediately in foil.
  12. The bread can be frozen for later use.
