Ingredients

  • 1 lb. dates
  • 1 1/4 cup hot water
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/2 cups flour
  • 2 cups pecans
  • 1 (4 oz.) jar cherries with juice
  • 1 cup raisins
  • 1 lb. green candied pineapple

Instructions

  1. Chop dates and pour 1 1/4 cups of hot water over them; set aside to soak.
  2. In a large bowl, cream shortening, sugar, and eggs.
  3. Add soaked dates and their warm water to the mixture. Stir in vanilla, cinnamon, salt, and soda.
  4. Add flour and chopped pecans; then fold in chopped cherries with juice, raisins, and chopped candied pineapple.
  5. Mix well until all ingredients are evenly combined.
  6. Prepare a 12-cup tube pan by flouring the sides and placing a waxed paper ring in the bottom.
  7. Pour the batter into the prepared pan.
  8. Bake at 325°F (160°C) for 2 hours without preheating the oven.
  9. Upon removal, wrap the cake immediately in foil to cool and preserve moisture.
