Ingredients

  • 2 1/4 cups chopped dates
  • 1 cup sugar
  • 1 cup water
  • 1 cup chopped nuts
  • 1 cup shortening
  • 2 cups packed brown sugar
  • 3 well-beaten eggs
  • 4 cups sifted flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Combine dates, sugar, and water in a saucepan.
  2. Cook over low heat until thick, about 10 minutes.
  3. Add nuts and let cool.
  4. Work shortening with a spoon until fluffy and creamy.
  5. Gradually add brown sugar while continuing to work.
  6. Add the well-beaten eggs and mix well.
  7. Sift together the flour, salt, and baking powder, then add to the mixture and mix well.
  8. Cover and chill the mixture.
  9. Divide the chilled mixture into two parts and roll each into a rectangle slightly less than 1/4-inch thick.
  10. Spread each rectangle with some of the date filling and roll up as for a jelly roll into two long rolls.
  11. Wrap in wax paper and chill overnight if possible.
  12. Cut into slices about 1/4-inch thick with a sharp knife.
  13. Arrange on a greased cookie sheet.
  14. Bake in a 400°F (200°C) oven for 10 to 12 minutes.
