Davies' Bourbon Chili
Ingredients
- 12 cup Bourbon ⓘ
- 12 cup coffee ⓘ
- three 15oz cans tomato sauce ⓘ
- four large tomatoes ⓘ
- 1 lb ground beef
- 1 lb Italian sausage
- one package bacon
- three ear of corn ⓘ
- one leek ⓘ
- one red pepper ⓘ
- one bundle green onion ⓘ
- one yellow onion
- two head of garlic ⓘ
- five jalapeno pepper ⓘ
- one 15oz can black beans ⓘ
- one 15oz can garbanzo beans ⓘ
- one 15oz can adzuki beans ⓘ
- 2 tablespoons chili powder ⓘ
- 1 tablespoon cumin powder ⓘ
- 1 tablespoon toasted and ground szechuan peppercorns ⓘ
- 3 teaspoons turmeric
- 3 teaspoons paprika ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon ground black peppercorns ⓘ
Instructions
- Remove seeds from jalapenos and red pepper.
- Dice all vegetables and add to large pot (at medium low heat) along with all liquids, spices, and legumes (rinse legumes before adding).
- Cook bacon in separate pan until semi-cooked, then add Italian sausage and beef--cook until browned, and mash into small pieces, discarding liquid as it accumulates.
- Add meat to pot with sauce and vegetables, cover and simmer for at least 45 minutes.
- After cooking, add another shot or two of bourbon.
