Ingredients

  • 1 c. boiling water
  • 3 oz. unsweetened chocolate
  • 8 Tbsp. butter
  • 1 tsp. vanilla extract
  • 2 c. sugar
  • 2 eggs
  • 1 tsp. baking soda
  • 1/2 c. sour cream
  • 1 3/4 c. unbleached all-purpose flour
  • 1 tsp. baking powder

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour a 10-inch tube pan.
  3. Pour boiling water over unsweetened chocolate and butter; let stand until melted.
  4. Stir in vanilla and sugar, then whisk in egg yolks, one at a time, blending well after each addition.
  5. Mix baking soda with sour cream; whisk into the chocolate mixture.
  6. Sift together flour and baking powder, then add to the batter, mixing well.
  7. Beat egg whites until stiff.
  8. Stir 1/4 of the beaten egg whites into the batter.
  9. Gently fold in the remaining egg whites.
  10. Pour the batter into the prepared pan.
  11. Bake on the middle rack for 40 to 50 minutes.
  12. Cool in the pan for 10 minutes, then unmold and cool completely.
  13. Frost the cake as desired.
