Tips & Substitutions

For a richer flavor, consider adding sautéed garlic or shallots to the squash mixture. If you want a lighter version, substitute Greek yogurt for sour cream or use low-fat mushroom soup. You can also use any combination of summer squash and zucchini available; both will work well in this dish. For added texture, sprinkle some grated cheese on top before baking.

Serving Suggestions

This summer squash bake is a versatile dish that pairs beautifully with grilled chicken or fish for a complete meal. Serve alongside a fresh green salad or crusty bread for added texture. It also makes an excellent side dish for larger gatherings, complementing other vegetarian recipes like Confetti Stuffed Peppers.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a baking dish covered with foil and warm in a preheated oven at 350°F for about 20 minutes, or until heated through. Alternatively, microwave individual portions on medium power until hot.
