Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs, beaten
  • 1 cup blackberry jam
  • 3 cups all-purpose flour
  • 2 teaspoons allspice
  • 3 teaspoons cinnamon
  • 2 tablespoons cocoa
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 3/4 cup blackberry wine
  • 1 pint walnuts
  • 1 cup raisins
  • 1/2 cup dates
  • 1 cup candied cherries
  • 1 c. flour

Instructions

  1. Line a large tube pan and two small loaf pans with greased foil.
  2. Cut up fruits, add nuts, and mix with 1 cup of flour; have ready to add to the batter.
  3. Sift together the remaining flour, spices, and cocoa; set aside.
  4. Cream butter with sugar until light and fluffy.
  5. Add beaten eggs gradually to the mixture and beat well.
  6. Stir in blackberry jam and beat well.
  7. Alternate adding the sifted flour mixture and buttermilk (which has baking soda dissolved in it), beating constantly.
  8. Fold in the fruit and nut mixture.
  9. Add blackberry wine and mix well.
  10. Spoon the batter into the prepared pans.
  11. Bake at 300°F (150°C) for 30 minutes, then reduce oven temperature to 250°F (120°C) and bake for an additional 2 hours.
  12. Place a small pan of water in the oven during baking.
  13. Let the cake cool in the pan.
  14. Once cooled, pour a small amount of wine over the cakes, wrap in cheesecloth, and store.
  15. Keep the cakes moist by periodically adding wine until ready to serve.
