- Cut the pork into 1 1/2-inch slices.
- Flatten each slice slightly into a rounded shape.
- Brown the pork in butter for about 5 minutes per side.
- Season with salt and pepper.
- Bake in a well-greased pan at 350°F for 35 to 40 minutes.
- Pour off the fat from the pan.
- Increase oven temperature to 500°F.
- Mix grated Swiss cheese, Dijon mustard, and 2 tablespoons of whipping cream in a bowl.
- Spread the cheese mixture over the pork.
- Bake at 500°F for 3 to 5 minutes or until the topping bubbles.
- Remove the pork from the oven and keep warm.
- In the same pan, mix apple juice with 3 1/2 tablespoons of whipping cream.
- Cook over low heat, stirring constantly and scraping the bottom and sides of the pan.
- Cook for 3 to 5 minutes until the sauce is slightly thickened.
- Pour the sauce over the pork and sprinkle with parsley.
