Ingredients

  • 2 lb. boneless pork loin
  • 1/2 c. butter
  • salt and pepper
  • 3/4 lb. Swiss cheese, grated
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. whipping cream
  • 1/4 c. apple juice
  • 3 1/2 Tbsp. whipping cream

Instructions

  1. Cut the pork into 1 1/2-inch slices.
  2. Flatten each slice slightly into a rounded shape.
  3. Brown the pork in butter for about 5 minutes per side.
  4. Season with salt and pepper.
  5. Bake in a well-greased pan at 350°F for 35 to 40 minutes.
  6. Pour off the fat from the pan.
  7. Increase oven temperature to 500°F.
  8. Mix grated Swiss cheese, Dijon mustard, and 2 tablespoons of whipping cream in a bowl.
  9. Spread the cheese mixture over the pork.
  10. Bake at 500°F for 3 to 5 minutes or until the topping bubbles.
  11. Remove the pork from the oven and keep warm.
  12. In the same pan, mix apple juice with 3 1/2 tablespoons of whipping cream.
  13. Cook over low heat, stirring constantly and scraping the bottom and sides of the pan.
  14. Cook for 3 to 5 minutes until the sauce is slightly thickened.
  15. Pour the sauce over the pork and sprinkle with parsley.
