Ingredients

  • 1 cup shortening
  • 3 1/2 cups plain flour
  • 1/2 cup buttermilk
  • 1 tablespoon orange peel
  • 1 cup nuts
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon soda
  • 1/2 cup coconut
  • 1 package chopped dates

Instructions

  1. Combine sugar and shortening in a mixing bowl.
  2. Beat until well blended.
  3. Add eggs, one at a time, beating after each addition.
  4. Blend the mixture well.
  5. Add soda to buttermilk and add to the mixture, beginning and ending with the flour.
  6. Add orange peel, coconut, nuts, and chopped dates to the batter.
  7. Pour the batter into a well-greased and floured or spray-coated tube pan.
  8. Bake at 350°F until the cake is light brown and a toothpick inserted in the center comes out clean.
