Ingredients

  • 8 eggs
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp salt
  • 3 Tbsp vanilla flavoring
  • 1 Tbsp almond flavoring
  • 1 lb chopped dates
  • 1.5 lbs chopped candied cherries
  • 6 cups chopped pecans

Instructions

  1. Beat eggs together.
  2. Add the sugar and cream well.
  3. Add flour, baking powder, salt, vanilla, and almond flavorings.
  4. Add chopped dates, candied cherries, pineapple, and chopped pecans.
  5. Hand mix well.
  6. Pack into a wax paper-lined, greased, and floured tube pan.
  7. Bake at 250 degrees Fahrenheit for 4 to 5 hours over a pan of water.
  8. Let the cake cool completely before removing from the pan.
