Deviled Crab Bake

Ingredients

  • 1 Tbsp. minced onion
  • 3 Tbsp. margarine
  • 3 Tbsp. flour
  • 1 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 2 c. milk
  • 4 drops bottled red pepper
  • 2 Tbsp. parsley
  • 2 cans crab meat
  • 4 hard-cooked eggs
  • 1 c. coarsely crumbled saltines
  • 2 Tbsp. lemon juice

Instructions

  1. Saute minced onion in margarine until tender.
  2. Stir in flour, dry mustard, and salt; cook until well combined.
  3. Gradually stir in milk, cooking for 1 minute until sauce thickens.
  4. Remove from heat; stir in lemon juice, red pepper, and parsley.
  5. Drain crab meat; chop hard-cooked eggs.
  6. Stir crab meat, chopped eggs, and half of the saltine cracker crumbs into the sauce.
  7. Pour mixture into a baking dish.
  8. Sprinkle remaining cracker crumbs on top.
  9. Bake at 375°F for 20 minutes until golden and bubbly.
