Ingredients

  • 1 stick margarine or butter
  • 2 Tbsp. sugar substitute (16 packets)
  • 1 egg
  • 1 1/2 c. unsweetened applesauce
  • 2 c. flour
  • 2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1 tsp. vanilla
  • 1 c. chopped pecans
  • 1 c. raisins or chopped dates

Instructions

  1. Mix margarine, sugar substitute, egg, and applesauce together and cream.
  2. In a separate bowl, combine flour, baking soda, cinnamon, and cloves.
  3. Gradually add the dry ingredients to the creamed mixture, mixing well.
  4. Stir in vanilla, chopped pecans, and raisins or chopped dates.
  5. Pour the batter into a greased baking pan.
  6. Bake at 350°F (175°C) for about 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.
