Ingredients

  • egg
  • ginger
  • packets of sweetener (e.g., Sweet 'N Low)
  • baking soda
  • molasses
  • cloves
  • flour
  • boiling water
  • salt

Instructions

  1. Preheat oven to 325°F and prepare a 9-inch square baking pan.
  2. Beat the egg with Sweet 'N Low or another sweetener suitable for diabetics.
  3. Melt margarine in boiling water.
  4. Add the melted margarine to the egg mixture.
  5. Stir in molasses.
  6. Sift together dry ingredients: ginger, baking soda, cloves, flour, salt.
  7. Add dry ingredients to the egg mixture and beat until smooth.
  8. Pour the batter into the prepared nonstick baking pan.
  9. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
