Ingredients

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 cups quick oats
  • 1 cup Mazola margarine
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

  1. In a medium bowl, combine flour, baking powder, baking soda, salt, and oats.
  2. In a large bowl, with a mixer at medium speed, beat margarine and peanut butter until smooth.
  3. Beat in brown sugar and sugar until blended.
  4. Beat in eggs and vanilla.
  5. Add flour mixture by hand and mix until well combined.
  6. Shape the dough into 2-inch balls.
  7. Place 6 balls on an ungreased cookie sheet.
  8. Flatten each ball to a 3-inch diameter.
  9. Bake in a 350°F (175°C) oven for 15 to 17 minutes.
  10. Remove from oven and let cool slightly before transferring to a wire rack.
  11. Store in a tightly covered container.
