Ingredients

  • 6 eggs
  • 2 cups granulated sugar
  • 3/4 cup oil
  • 6 teaspoons baking powder
  • Grated peel from half a lemon
  • 1/2 teaspoon salt
  • Grated peel from half an orange
  • 1 pound ground roasted peanuts
  • 5-6 cups flour

Instructions

  1. In a large pan, with a wooden spoon, beat eggs together, then add sugar, grated lemon and orange peel, and oil. Set aside.
  2. In a separate bowl, combine all the dry ingredients and then add to the egg mixture.
  3. Knead into a soft dough, adding more flour if necessary.
  4. Roll out into a thin log and flatten with your hand, then cut into diamond shapes.
  5. Place on greased tins.
  6. Bake at 350-375°F (175-190°C) for 18-20 minutes until light golden.
  7. Cool the cookies and frost if desired.
  8. Optional: add sprinkles on top before baking.
