- In a large pan, with a wooden spoon, beat eggs together, then add sugar, grated lemon and orange peel, and oil. Set aside.
- In a separate bowl, combine all the dry ingredients and then add to the egg mixture.
- Knead into a soft dough, adding more flour if necessary.
- Roll out into a thin log and flatten with your hand, then cut into diamond shapes.
- Place on greased tins.
- Bake at 350-375°F (175-190°C) for 18-20 minutes until light golden.
- Cool the cookies and frost if desired.
- Optional: add sprinkles on top before baking.
