Ingredients

  • 3/4 cup finely crushed saltine crackers
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground thyme
  • 1/4 teaspoon pepper
  • 1/8 to 1/4 teaspoon sage
  • 1 egg
  • 1 tablespoon Dijon mustard
  • 1/4 cup oil
  • 4 to 6 pork chops

Instructions

  1. Mix crushed saltine crackers, salt, thyme, pepper, and sage in a shallow dish; set aside.
  2. Blend egg and Dijon mustard in another shallow dish.
  3. Dip each pork chop into the egg mixture, then coat with the cracker mixture.
  4. Heat oil in a skillet over moderate heat.
  5. Add the coated pork chops to the skillet.
  6. Fry the pork chops for 16 to 20 minutes, turning only once, until cooked through and golden brown.
