Ingredients

  • 1 stick margarine, softened
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 4 cups Rice Krispies
  • coconut (for rolling)
  • 1 package dates, chopped
  • 1 cup chopped pecans

Instructions

  1. Mix margarine and sugar until well combined.
  2. Add the well beaten egg and chopped dates to the mixture.
  3. Cook over low heat until the mixture is dissolved.
  4. Add chopped pecans and cook for 8 minutes longer, stirring constantly.
  5. Remove from heat and stir in vanilla extract.
  6. Add Rice Krispies and mix well.
  7. Form the mixture into small balls and roll in flaked coconut.
  8. Optional: Make in advance and store in refrigerator or freezer.
