Divine salmon features tender baked fish filled with fresh tomato and onion slices, seasoned with herbs, and topped with garlic and tomatoes for a flavorful, elegant meal.

Ingredients

  • 1 1/2 lb. salmon
  • 1/2 lemon
  • 1/2 onion
  • salt
  • pepper
  • 1/4 tsp. dried tarragon leaves
  • 1/4 cup chopped parsley
  • 1 clove garlic
  • 1 tablespoon butter
  • 1 medium tomato

Instructions

  1. Pat dry the salmon and clean it for stuffing. Squeeze lemon into the fish cavity.
  2. Place the salmon on a buttered piece of foil. Fill the salmon with tomato and onion slices.
  3. Season with salt, pepper, dried tarragon leaves, and chopped parsley. Close the foil around the fish.
  4. Bake at 425°F (218°C) for 25 to 30 minutes.
  5. Melt butter in a skillet over medium heat.
  6. Sauté minced garlic and diced tomatoes in the skillet.
  7. Remove the baked salmon to a serving dish.
  8. Spoon any juice from the skillet over the fish.
  9. Serve with sautéed tomatoes and garnish with dill and lemon slices.
