Ingredients

  • 1 tsp. soda
  • 2 c. boiling water
  • 2 c. buttermilk
  • 1 Tbsp. butter
  • 2 egg yolks
  • 2 egg whites

Instructions

  1. Sift dry ingredients together: cornmeal, salt, and soda.
  2. Add boiling water and blend well.
  3. Stir in butter, beaten egg yolks, and buttermilk until fully incorporated.
  4. Gently fold in beaten egg whites until just combined.
  5. Pour batter into a greased 400°F oven-safe dish.
  6. Bake for 40 to 45 minutes until golden and cooked through.
