Ingredients

  • 2 (10 oz.) packages frozen chopped spinach, thawed and drained
  • 1 large onion
  • 1/2 lb. sliced mushrooms
  • 1 lb. Swiss cheese, cut in 1/2-inch cubes
  • 4 eggs, beaten
  • 1 stick butter

Instructions

  1. Saute onion and mushrooms in butter until onion is translucent. Let cool slightly.
  2. In a large bowl, mix thawed and drained spinach, beaten eggs, and Swiss cheese cubes.
  3. Add the sautéed onion and mushroom mixture to the spinach mixture.
  4. Mix thoroughly to combine all ingredients.
  5. Add salt and pepper to taste.
  6. Pour the mixture into an ovenproof 8 x 12-inch glass dish.
  7. Bake in a preheated 350°F oven for approximately 45 minutes or until golden brown.
