Ingredients

  • 1 1/2 cups self-rising cornmeal
  • 2 tablespoons flour
  • 2 tablespoons oil
  • 1 egg
  • 3/4 cup buttermilk
  • 1/2 cup water

Instructions

  1. Preheat oven to 450°F.
  2. Place a skillet on the stove eye with oil; let the skillet get hot.
  3. Mix self-rising cornmeal, flour, buttermilk, and water in a bowl.
  4. Add the well-beaten egg and mix well.
  5. Pour the batter into the hot skillet.
  6. Leave the skillet on the stove eye for about one minute.
  7. Place the hot skillet on the bottom rack in the oven and bake for 5 minutes.
  8. Move the skillet to the top rack and turn on the broiler until the cornbread is golden brown.
