Ingredients

  • juice of 1 orange
  • 1/2 c. brown sugar
  • orange rind
  • 1 c. raisins
  • 1/2 c. nut meats
  • 1 tsp. baking powder
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1/2 c. shortening
  • 2 eggs
  • 2 c. flour
  • 1 c. milk

Instructions

  1. Mix together brown sugar and orange juice, set aside.
  2. Chop orange rind, raisins, and nuts in a chopper or processor and set aside.
  3. Cream together sugar, baking soda, and shortening.
  4. Add eggs to creamed mixture, one at a time, and mix well.
  5. Sift flour and baking powder, then add alternately to creamed mixture with 1 cup milk. Add the raisin-nut mixture.
  6. Bake at 350° for 40 minutes.
  7. Remove from pan immediately and pour juice/brown sugar mix slowly over the top.
  8. Cool before serving.
