Ingredients

  • 1/2 cup mayonnaise
  • 1 egg
  • 1/3 cup minced green pepper
  • 3 tablespoons minced onion
  • 1 teaspoon dry mustard
  • 1/4 to 1/2 teaspoon pepper
  • 1 pound fresh lump crabmeat, drained
  • about 2 cups fresh breadcrumbs
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • tartar sauce (optional)

Instructions

  1. Combine mayonnaise and egg in a large bowl; mix in the minced green pepper, minced onion, dry mustard, and pepper.
  2. Stir in crabmeat and enough breadcrumbs to hold the mixture together, about 1 to 1 1/4 cups.
  3. Shape the mixture into 8 patties.
  4. Coat the patties with remaining breadcrumbs.
  5. Heat butter and vegetable oil in a large heavy skillet over medium heat.
  6. Add crab cakes in batches and fry until lightly browned on both sides.
  7. Serve with tartar sauce if desired.
