Dried Fruit Oat Muffins

Ingredients

  • 3/4 c. pineapple sauce
  • 2/3 c. buttermilk
  • 1/3 c. sugar
  • 1 large egg, slightly beaten
  • 2 Tbsp. vegetable oil
  • 1 c. uncooked old-fashioned oats
  • 1/3 c. dried currants
  • 1/3 c. dried apricots, minced
  • 1/3 c. pitted, chopped dates
  • 1 1/2 c. unsifted all-purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt

Instructions

  1. Preheat oven at 350°.
  2. Prepare muffin cups as above.
  3. In bowl, mix first 5 ingredients; stir in oats and dried fruit.
  4. On wax paper, mix dry ingredients and stir into batter just until moistened.
  5. Bake for 20 to 25 minutes, until golden.
  6. Makes 12 muffins, 168 calories each.
