Dried Fruit Oat Muffins
Ingredients
- 3/4 c. pineapple sauce
- 2/3 c. buttermilk ⓘ
- 1/3 c. sugar ⓘ
- 1 large egg, slightly beaten ⓘ
- 2 Tbsp. vegetable oil ⓘ
- 1 c. uncooked old-fashioned oats ⓘ
- 1/3 c. dried currants ⓘ
- 1/3 c. dried apricots, minced ⓘ
- 1/3 c. pitted, chopped dates ⓘ
- 1 1/2 c. unsifted all-purpose flour ⓘ
- 2 tsp. baking soda ⓘ
- 1/2 tsp. salt ⓘ
Instructions
- Preheat oven at 350°.
- Prepare muffin cups as above.
- In bowl, mix first 5 ingredients; stir in oats and dried fruit.
- On wax paper, mix dry ingredients and stir into batter just until moistened.
- Bake for 20 to 25 minutes, until golden.
- Makes 12 muffins, 168 calories each.
