Duck With Turnips

Ingredients

  • 3 teal ducks, cleaned and halved
  • 1 1/2 Tbsp. flour
  • 1 onion, chopped
  • 1 1/2 Tbsp. butter
  • 1 sprig parsley
  • 1 green onion

Instructions

  1. Fry the duck lightly on both sides until browned.
  2. Make gravy by browning the flour in butter.
  3. Add chopped onion and let it mellow.
  4. Add parsley, green onion, and celery to the gravy with 3 cups of water.
  5. Let all simmer for 10 minutes.
  6. Add the duck to the gravy and cook until it begins to tenderize.
  7. Add parboiled turnips and cook until the duck is tender.
