Ingredients

  • 1 lb. pork sausage
  • 1/4 cup chopped onion
  • 2 1/2 cups loose-pack hash brown potatoes
  • 1 cup shredded Cheddar cheese (4 oz.)
  • 1 3/4 cups milk
  • 1 cup baking mix (Bisquick)
  • 4 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 10-inch glass pie plate.
  3. Cook sausage and chopped onion in a skillet; stir frequently until fully cooked and drain excess fat.
  4. Mix cooked sausage, hash brown potatoes, and 1 cup of shredded Cheddar cheese in the pie plate.
  5. Beat remaining ingredients except 1/4 cup cheese with a wire whisk or hand beater until smooth.
  6. Pour the egg mixture over the sausage and potato mixture in the pie plate.
  7. Bake for 40 minutes or until golden brown and a knife inserted in the center comes out clean.
  8. Sprinkle 1/4 cup shredded Cheddar cheese on top and bake for an additional 2 minutes to melt the cheese.
