- Preheat oven to 400°F.
- Grease a 10-inch glass pie plate.
- Cook sausage and chopped onion in a skillet; stir frequently until fully cooked and drain excess fat.
- Mix cooked sausage, hash brown potatoes, and 1 cup of shredded Cheddar cheese in the pie plate.
- Beat remaining ingredients except 1/4 cup cheese with a wire whisk or hand beater until smooth.
- Pour the egg mixture over the sausage and potato mixture in the pie plate.
- Bake for 40 minutes or until golden brown and a knife inserted in the center comes out clean.
- Sprinkle 1/4 cup shredded Cheddar cheese on top and bake for an additional 2 minutes to melt the cheese.
