Ingredients

  • 1 chicken, cut up
  • 3 Tbsp. butter
  • 4 carrots
  • 3 small leeks
  • 1 lb. small white onions
  • 2 medium turnips
  • 2 large potatoes
  • 4 sprigs parsley, chopped
  • 1 tsp. dried marjoram
  • 1 bay leaf
  • 1 tsp. salt
  • 1 1/2 tsp. ground black pepper

Instructions

  1. Melt butter in a heavy skillet over medium heat.
  2. Add the chicken pieces and cook until browned on both sides.
  3. Transfer the chicken to a heavy pot.
  4. Wash all vegetables thoroughly.
  5. Peel the carrots and slice into 2-inch pieces.
  6. Peel the onions.
  7. Peel and quarter the turnips and potatoes.
  8. Place all the vegetables on top of the chicken in the pot.
  9. Add chopped parsley, dried marjoram, bay leaf, salt, and ground black pepper.
  10. Pour enough cold water to cover all ingredients.
  11. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours.
  12. Serve hot with some chicken, vegetables, and broth in a bowl.
