- In a large mixing bowl, combine the eggs, sugar, milk, vanilla, and lemon flavoring; mix well.
- In a separate bowl, whisk together the flour, salt, nutmeg, cinnamon, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
- Stir in the shortening until evenly incorporated.
- Heat 6 cups of oil in a Dutch oven over medium heat until it reaches 350°F (175°C).
- On a floured surface, roll out the dough to about 1/2 inch thickness.
- Cut into doughnut shapes or circles using a cookie cutter or glass.
- Carefully fry the doughnuts in the hot oil, a few at a time, until golden brown, about 2-3 minutes per side.
- Use a slotted spoon to transfer the cooked doughnuts to paper towels to drain excess oil.
- Allow to cool slightly before serving.
