Ingredients

  • 2 eggs
  • 1 cup sugar
  • 4 3/4 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 3 teaspoons baking powder
  • 1 cup milk
  • 2 tablespoons shortening
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon lemon flavoring
  • 6 cups oil

Instructions

  1. In a large mixing bowl, combine the eggs, sugar, milk, vanilla, and lemon flavoring; mix well.
  2. In a separate bowl, whisk together the flour, salt, nutmeg, cinnamon, and baking powder.
  3. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  4. Stir in the shortening until evenly incorporated.
  5. Heat 6 cups of oil in a Dutch oven over medium heat until it reaches 350°F (175°C).
  6. On a floured surface, roll out the dough to about 1/2 inch thickness.
  7. Cut into doughnut shapes or circles using a cookie cutter or glass.
  8. Carefully fry the doughnuts in the hot oil, a few at a time, until golden brown, about 2-3 minutes per side.
  9. Use a slotted spoon to transfer the cooked doughnuts to paper towels to drain excess oil.
  10. Allow to cool slightly before serving.
