Ingredients

  • 3 (12 oz.) packages shredded potatoes
  • 1 (8 oz.) carton sour cream
  • 1 can cream of chicken soup
  • 1/2 cup chopped onion
  • 1/2 cup margarine, melted
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 8 oz. Colby cheese, shredded

Instructions

  1. If frozen, thaw the shredded potatoes.
  2. Mix all ingredients well: shredded potatoes, sour cream, cream of chicken soup, chopped onion, melted margarine, pepper, salt, and shredded Colby cheese.
  3. Place the mixture into a greased 9 x 13-inch casserole dish.
  4. Bake at 375°F (190°C) for 45 minutes until hot and bubbly.
