  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 c. mayonnaise
  • chow mein noodles

Instructions

  1. In a large 9 x 13-inch pan or 3-quart casserole dish, layer the ingredients: cooked chicken, frozen asparagus, cooked noodles, drained mushrooms, pimentos, diced celery, diced onion, chopped green pepper, sliced olives, cream of mushroom soup, cream of chicken soup, and mayonnaise.
  2. Bake at 350°F for 45 minutes.
  3. During the last 15 minutes of baking, sprinkle chow mein noodles over the top.
  4. Serve hot.

Tips & Substitutions

For added flavor, consider seasoning the chicken with garlic powder or herbs before layering. If you don't have narrow noodles, any pasta shape will work, or try using rice as a base. You can substitute fresh asparagus for the frozen variety, just blanch it first. Additionally, if you want a lighter dish, use Greek yogurt in place of mayonnaise.

Frequently Asked Questions

Can I use fresh chicken instead of cooked?

Yes, you can use fresh chicken; just cook and shred it before adding it to the dish. Adjust the cooking time to ensure the chicken is fully cooked. This will enhance the flavor and texture of your hot dish.

What can I substitute for cream of mushroom soup?

If you prefer a healthier option or need a substitute, you can use homemade mushroom sauce or a mix of sour cream and vegetable broth. This will still provide creaminess while adding depth to the flavor.

Is this dish suitable for freezing?

Yes, this hot dish freezes well. To freeze, allow it to cool completely, then cover tightly and store in the freezer for up to three months. Thaw in the refrigerator before reheating, ensuring it retains its texture and flavor.
