Ingredients

  • 1 large head cauliflower
  • 1/2 cup mayonnaise
  • 1/2 cup shredded Cheddar cheese
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon red pepper
  • 3 strips bacon
  • 1 medium onion
  • 2 cups coarsely cut cabbage
  • 2 cups leftover potatoes

Instructions

  1. Fry the bacon until crispy, then remove from the pan and set aside.
  2. In the bacon fat, sauté the chopped onion until translucent.
  3. Add the chopped cabbage to the onions and cook until wilted.
  4. Return the cooked bacon to the pan and stir often.
  5. Add the leftover potatoes to the mixture and pat down to form a large pancake.
  6. Fry until browned on one side, then turn and brown the other side.
