Ingredients

  • all-purpose flour
  • butter (sweet)
  • Cheddar cheese (strong)
  • salt
  • pepper
  • cayenne pepper

Instructions

  1. Use equal portions of all-purpose flour, butter, and Cheddar cheese.
  2. Rub the butter into the flour along with salt, pepper, and a touch of cayenne pepper until the mixture resembles coarse crumbs.
  3. Add finely grated Cheddar cheese and knead into a cohesive ball of dough.
  4. Cover the dough with foil or place into a plastic bag and refrigerate for at least 30 minutes.
  5. Roll out the chilled dough to about 1/4 inch thickness.
  6. Cut or stamp into bite-sized pieces using cookie cutters and place on a cookie sheet.
