Ingredients

  • 1/2 lb. Mozzarella cheese, diced
  • 2 lb. Ricotta or cottage cheese, well drained
  • 2 eggs, slightly beaten
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1 (28 oz.) jar spaghetti sauce
  • 1 package manicotti shells

Instructions

  1. Cook the manicotti shells according to package directions; drain and lay flat on foil to cool.
  2. Preheat oven to 350°F (175°C).
  3. In a large bowl, combine ricotta or cottage cheese, diced mozzarella, beaten eggs, grated Parmesan cheese, chopped parsley, salt, sugar, and pepper.
  4. Stuff the cooled manicotti shells with the cheese mixture.
  5. Spread a layer of spaghetti sauce in a baking dish.
  6. Arrange the stuffed shells in the dish over the sauce.
  7. Pour remaining spaghetti sauce over the shells.
  8. Bake in the preheated oven for about 35 minutes until bubbly and heated through.
