- Slice the unpeeled eggplant into 1/2-inch thick slices.
- Brown the eggplant slices in shortening, then remove and set aside.
- Saute the ground beef until fully cooked.
- In a well-oiled casserole dish, layer eggplant slices, then ground beef, then chopped onions, sprinkling each layer with salt.
- Repeat the layering process as needed.
- Spread the undiluted tomato soup over the top of all layers.
- Cover the casserole and bake at 350°F (175°C) for 30 minutes.
- Uncover and bake for an additional 30 minutes.
