Ingredients

  • 1 large round eggplant
  • 1/4 cup shortening
  • 1 pound ground beef
  • 1 teaspoon salt
  • 4 onions, chopped
  • 1 can tomato soup

Instructions

  1. Slice the unpeeled eggplant into 1/2-inch thick slices.
  2. Brown the eggplant slices in shortening, then remove and set aside.
  3. Saute the ground beef until fully cooked.
  4. In a well-oiled casserole dish, layer eggplant slices, then ground beef, then chopped onions, sprinkling each layer with salt.
  5. Repeat the layering process as needed.
  6. Spread the undiluted tomato soup over the top of all layers.
  7. Cover the casserole and bake at 350°F (175°C) for 30 minutes.
  8. Uncover and bake for an additional 30 minutes.
