Ingredients

  • 1 box yellow cake mix
  • 1 cup applesauce
  • 4 eggs
  • 2 Tbsp lemon extract
  • 2 Tbsp orange extract
  • 1/2 lb candied cherries
  • 1/2 lb candied pineapple
  • 1 lb chopped dates
  • 2 cups chopped pecans
  • 1/4 cup flour

Instructions

  1. Combine the cake mix with applesauce, eggs, lemon extract, and orange extract. Mix well.
  2. Toss cherries, pineapple, dates, and chopped pecans with flour to coat.
  3. Stir the fruit and nuts into the cake mixture.
  4. Mix well once more.
  5. Pour the batter into two greased pans or line pans with waxed paper.
  6. Bake at 275°F (135°C) for 1 3/4 hours.
