Ingredients

  • 1 lb. medium shrimp, cleaned and deveined
  • 3 Tbsp. vegetable oil
  • 1 large onion, cut
  • 2 large tomatoes, cut
  • 1 green chili
  • juice of 1 lemon
  • 1 tsp. sugar
  • 1 Tbsp. paprika
  • 1 tsp. curry powder
  • salt to taste
  • 3 cloves garlic
  • 1/2 pkg. cream of coconut or 1/2 can coconut milk
  • 1 c. water
  • white rice

Instructions

  1. Boil the shrimp in 2 cups of water with a little salt for about 5 minutes.
  2. Drain the shrimp and set aside.
  3. Using a blender, combine the onion, tomatoes, green chili, lemon juice, sugar, paprika, curry powder, salt, and garlic into a paste.
  4. Heat vegetable oil in a large pot and sauté the ground paste and coconut until fragrant, stirring constantly until the oil floats to the top, about 15 minutes.
  5. Add 1 cup of water to the pot and bring to a boil.
  6. Lower the heat and add the cooked shrimp to the curry.
  7. Simmer gently until the liquid is slightly reduced and flavors meld, about 5 minutes.
  8. Serve the curry hot with boiled white rice.
