Ingredients

  • 1 1/2 cups margarine
  • 3 cups sugar
  • 1 tablespoon vanilla
  • 5 eggs
  • 2 cups flour
  • 1 cup cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 24 peppermint patties

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking pan.
  3. In a large bowl, mix melted margarine, sugar, and vanilla until fluffy.
  4. Add eggs and stir until blended.
  5. Sift together flour, cocoa, baking powder, and salt.
  6. Add to the sugar mixture and blend well. Reserve 2 cups of batter and set aside.
  7. Spread the remaining batter in the prepared pan.
  8. Place peppermint patties in a single layer over the batter, about an inch apart.
  9. Spread the reserved batter over the peppermint patties.
  10. Bake for 50 to 55 minutes.
  11. Do not overbake.
  12. Cool and cut into 36 bars.
