Easy Oriental Chicken

Ingredients

  • 1 lb. skinned, boned chicken breasts, cut into 1-inch chunks (1 1/2 ok)
  • 2 Tbsp. cornstarch
  • 2 Tbsp. soy sauce
  • 1 tsp. ground ginger
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 2 Tbsp. cooking oil
  • 1/4 c. firmly packed brown sugar
  • 1/4 c. cider vinegar
  • 1 can pineapple chunks (optional, to taste)

Instructions

  1. Combine chicken, cornstarch, soy sauce, ginger, garlic and salt.
  2. Heat oil in skillet over medium heat.
  3. Add mixture; cook for 3 minutes.
  4. Add brown sugar, vinegar and 1/4 c.
  5. water. Cover; simmer for 10 minutes, stirring often.
  6. Add pineapple to chicken mixture; continue cooking, uncovered, for 10 minutes more. Ready!
  7. Serves 4.
