Ingredients

  • 6 hard-cooked eggs, peeled and sliced
  • 30 small rounds buttered bread
  • 1 (3 oz.) package cream cheese, at room temperature
  • 2 Tbsp. mayonnaise
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/2 tsp. vinegar
  • 1 (2 oz.) jar pimento strips, drained
  • watercress

Instructions

  1. Remove yolks from eggs; put into a sieve over a bowl.
  2. Place rings of white on buttered bread.
  3. Sieve egg yolks and ends of whites.
  4. Mix sieved eggs, cream cheese, mayonnaise, mustard, salt, and vinegar.
  5. Beat until smooth.
