Ingredients

  • 3 lb. skinned chicken, in pieces
  • 1/4 c. green pepper (optional)
  • 1/2 c. chopped fresh onion
  • 1/4 c. orange juice concentrate (no water)
  • 1/4 c. ketchup
  • 1/4 c. water
  • 2 Tbsp. soy sauce
  • 2 Tbsp. flour
  • 1/2 tsp. garlic
  • 1/2 tsp. dry mustard
  • 1/4 tsp. pepper

Instructions

  1. Mix all ingredients in a small bowl to create the marinade.
  2. Dip the chicken pieces into the mixture, coating them completely.
  3. Lay the coated chicken in a single layer in a baking dish.
  4. Cover and bake at 350°F for 1 hour.
  5. Uncover and place orange slices over each piece, if desired.
  6. Bake uncovered for an additional 15 minutes.
