Ingredients

  • 1/4 cup chopped onion
  • 2 tablespoons butter
  • 1/2 cup milk
  • 6 eggs, hard-cooked
  • 1/4 cup chopped green pepper
  • 10 3/4 ounces mushroom soup
  • 2 cups cooked rice

Instructions

  1. Saute chopped onion and green pepper in butter until tender.
  2. Add mushroom soup and milk; reserve 1/2 cup of the mixture.
  3. Stir cooked rice into the remaining mixture.
  4. Pour the mixture into a greased 9 x 12-inch dish.
  5. Cut hard-cooked eggs in half lengthwise and press them into the rice mixture.
  6. Drizzle the reserved soup mixture over the eggs and cover the dish.
  7. Bake at 350°F for 25 minutes.
